Sfogliatella, lobster tail, frolla, pastierina.
Names that lead into the story of an entire city. They fill the mouth thanks to a recipe handed down from generation to generation to arrive intact in the best patisseries. Follow the trail of unique fragrances of Campania as well as Italy and beyond.
Famous throughout the world for the fragrance with which the dough embraces the filling of ricotta and semolina, tasted just out of the oven, is even better than when it is cold. Sfogliatella is the best bond of different flavors – from candied fruit to cinnamon. In the wake of an ancient tradition, now as then it meets everyone’s taste, remaining one of the glories of the Neapolitan pastry tradition.
Also known as Apollino, it is much larger than the neapolitan sfogliatella. It is characterized by an elongated shape, similar to the crustacean from which it takes its name. To be filled with custard or whipped cream, adding a black cherry on its back, to obtain a richer taste.
As alternative to Neapolitan sfogliatella, characterized by a very crispy shell, the Neapolitan frolla presents a softer and simple composition. A round shell of shortcrust pastry – from which gets its name – with the same filling based on ricotta, flour, sugar, candied fruit and cinnamon that makes this pastry more pleasant to the palate, letting itself enjoyed slowly.
Warm announcement of spring and by now a classic, not only during the Easter period, according to the tradition that relates it to Cerere and the time of rebirth. Crispy outside and soft inside for full pleasure. It offers an amazing composition of ricotta, candied fruit and grain.
The Capresina is a pleasant pastry widespread in Capri and beyond in the Sorrento Peninsula and along the Amalfi coast. A soft mixture, available in two versions, with cocoa, extra dark chocolate and peeled sweet almonds or in the most delicate lemon version.
